Fresh tomatoes really makes this recipe. San Marzano would be great because the flesh is thicker, it contains fewer seeds, they are less acidic and they have a strong and sweet taste. But dont worry, any type of fresh tomato that you have on hand would work for this recipe.
How to Store & Freeze
Freezing Tomato Basil Soup: Let soup come to room temperature then transfer soup to air tight container. you’re ready to cook, remove and let soup thaw for about 1-2 hours then place mostly frozen soup in a pot to heat.
Store in refrigerator: Let soup come to room temperature then store in air tight container in refrigerator for 3-5 days.
