10 Minute Veggie Quesadillas & Salsa Guacamole

These 10 minute quesadillas are easy to prepare and even easier to make!

Quesadilla Ingredients: Mixed colorful peppers Yellow onion Bello mushrooms Black beans Roma tomatoes 2 Tortillas

Olive oil Vegan friendly butter (optional) Vegan friendly cheese (optional) Spices : Salt Pepper Paprika Cumin Chili powder Garlic powder Onion powder Salsa guacamole ingredients: Avocado Roma tomatoes, chopped Cilantro, chopped Yellow onion Salt Chili powder Cumin Lemon juice

Quesadilla Directions: 1. Chop all veggies (except beans) in slices. 2. Heat 1-2 Tbs of olive oil in pan. Add onions, peppers and mushrooms. Halfway through add spices. Cook until veggies get soft. 3. Add in tomatoes and beans to sautéed veggies. Cook for 2 minutes. Add mixture aside in a bowl. 4. Heat up 1-2 Tbs vegan butter or olive oil in same pan on medium heat. Add one tortilla then add veggie mixture on top. Top with vegan cheese if you are using it. Finally add other tortilla. 5. Cook until bottom tortilla is lightly brown. Flip (be careful, this part can get messy) and cook on other side until it’s lightly brown and cheese is melted if you used it. Slice in 4 or more slices and enjoy! Salsa guacamole directions : 1. Mash avocado then add all ingredients. Give it a good mix. You just need a little bit of lemon juice and onions. Add spices little by little. Remember you can always add more but you can’t add less!
