Cashew Beet Dill Dip


This versatile beet dip is so yummy ! You can use in salads, wraps, spread on crackers, dips for veggies, just about anything. Its also a great way to enjoy those hard to eat beets. Serve it to people and tell them they just ate beets after !



Ingredients

4-5 small roasted beets (package brand is easier)

½ Cucumber, Peeled and sliced

1 cup cashews, soaked

1-2 Tbs fresh dill or dried if you can't find fresh

½-1 lemon juice

Lemon zest

½ garlic clove

Salt

Pepper

2-3 Tbs Grapeseed or olive oil

1 Tbs Nutritional yeast

Directions

  1. Add everything except grapeseed oil to high speed blender. Be sure not to add too much salt, lemon juice and pepper. Remember you can always add more but cant add less! Blend on medium- high until everything is blended. Turn blender to low setting.

  2. Add in olive oil while blender is running on low. Texture should get creamer. Add more seasoning and lemon juice if needed.

  3. Enjoy in salads, wraps, crackers, veggies, whatever you like.
