Spicy Lentil Soup
This soup is perfect for any occasion. You don't need a side dish to eat with this soup. Its so filling by itself. Its perfect in the winter, ill even eat it in the summer. This is the best soup I ever tasted. If you don't like food too spicy, you can totally take the sriracha out! Ingredients ¼ cup extra virgin olive oil 1 cup green lentils 2-3 carrots, chopped 1 small onion or ½ large onion, chopped 3-4 cloves garlic, minced 1 large tomato, chopped 2 cups kale, chopped lemon to taste 2 vegetable broth cubes 2-3 tsp sriracha 6 ½ cup water Spices 1 tsp cumin 2 tsp curry seasoning ¼ tsp chili powder ½ tsp thyme 1 tsp salt 1 tsp red pepper flakes 2 bay leaves ¼ - ½ tsp pepper
Heat oil in soup pot. Once oil is simmering, add carrots, onion and garlic. Cook until onions turn translucent.
Next add cumin, curry, chili powder, thyme, salt and pepper. Stir mixture very well. Add tomatoes then stir for a few more minutes.
Add water, lentils, veggie broth cubes, red pepper flakes, sriracha and bay leaves to pot. Adjust temperature to high until the water comes to a boil. Partially cover and reduce heat until the water comes to a shimmer. Cook for 30 minutes or until the lentils soften.
Lower temperature to low. Carefully add 2 ½ cups of the soup mixture to bender. Try to get more veggies and less broth. Blend carefully on low until the mixture is smooth. Pour back into soup.
Stir in chopped kale and cook until soft. Squeeze in lemon juice slowly and gradually taste until the flavor of the soup pops. Don't forget this step, its brings out so much flavor in the soup. Enjoy !
